Chicken Katsu Curry

This evening I cooked chicken katsu curry! It was so tasty I thought I’d share the recipe as I’ve never cooked anything like this before. I’m starting to get into cooking a little bit more so thought as I’m a total noob it might inspire some other other beginners to try out this recipe too! As you can see my presentation skills aren’t very good yet but it tastes great so who cares ;)

I also tried cooking Chicken udon noodle soup a few times which is a very simple but delicious dish that I’d also recommend :)

However I’d say the recipe is quite out in terms of some of the amounts specified!
Firstly, the amount of curry you see here was close to half the amount (maybe a third) it made when it’s meant to be for 4 people/ 4 chicken breasts (I made the full amount so I could freeze some) so if I were you I’d either double the curry or half the amount of chicken breasts unless you only want the curry as a small portion size/side sauce. Secondly the amounts for the breadcrumbs were vastly off. 100g flour for 4 chicken breasts was about double the amount I needed and 200g of panko breadcrumbs was ridiculously too much- that’s a whole bag so tonnes! I halved that amount and even then ended up wasting a whole bunch of it so I’d suggest using much much less than the recipe states, perhaps just 75g would be fine if making 4 chicken breasts worth, then add more if necessary rather than putting it all in the bowl to start with.
